Oven-baked pancake with bacon, served warm with lingonberry jam

Fläskpannkaka means, quite simply, pork pancake: a plain egg batter rises in the oven over crisp bacon, golden at the edges and tender in the middle. It is traditionally served with lingonberry jam, and finely shredded green cabbage on the side is welcome too. A weeknight supper for autumn and winter.

Ingredients

  • 8¾ ozbaconlightly smoked or pork belly, diced
  • 3eggfor the batter
  • 2½ cupsmilkfor the batter, added in two parts
  • 7 ozwheat flourfor the batter
  • ½ tspsaltfor the batter
  • 1 tbspbutterfor greasing the dish
  • 4 tbspto serve
  • white cabbagefinely shredded, flavoured with lingonberry jam, as a side (optional)

Method

  1. Heat the oven to about 435 °F and butter a baking dish of roughly 20 × 30 cm.
  2. Dice the bacon, spread it over the dish and brown it in the oven for 5–10 minutes, until the fat starts to run.
  3. Meanwhile, whisk the eggs. Add the flour, salt and half the milk and whisk until smooth, then stir in the rest of the milk.
  4. If you have time, let the batter rest for 10–30 minutes.
  5. Take the dish out of the oven and pour the batter over the hot bacon.
  6. Bake on the middle shelf for 25–30 minutes, until the pancake is golden, well risen and set in the centre.
  7. Let it rest for a few minutes, cut into pieces and serve warm with lingonberry jam.

Tips and variations

For more vegetables, roast carrot, parsnip, swede or celeriac and red onion along with the bacon. If you like your bacon extra crisp, fry it separately and lay it on the finished pancake; blueberries work well here instead of the lingonberry jam. A little melted butter stirred straight into the batter makes it richer. In an air fryer, brown the bacon for 7 minutes at 200 °C, then bake the pancake for 25 minutes at 180 °C. Finely shredded green cabbage, sharpened with a spoonful of lingonberry jam, turns it into a full meal.
