lingonberry jam
Lingonberries cooked or simply stirred with sugar, tart with a faintly bitter edge, the classic partner for meatballs and game.
In German-speaking countries jarred lingonberries are in almost every supermarket, while in English-speaking countries they are more likely found in Scandinavian shops, delicatessens or by mail order. A not overly sweet kind with whole berries works best.
Substitute:
Cranberry sauce comes closest but is sharper and firmer and lacks the faintly bitter woodland note, so a little extra sugar may help.
