Creamy skyr with blueberries, honey and a splash of lemon

Skyr með bláberjum is Icelandic for simply skyr with blueberries, and that is all it needs: thick, creamy skyr, a little honey and berries kept bright with lemon. It is best in summer and autumn, when blueberries are fresh, wild ones if you can find them. It takes ten minutes to bring to the table for two.

Ingredients

  • 12⅓ ozplain, stirred smooth
  • 7 ozblueberriesfresh or frozen, preferably wild blueberries
  • 2 tbsphoneyfor sweetening; alternatively agave syrup or maple syrup
  • 1 tsplemon juicea splash for the berries
  • minta few leaves for garnish (optional)

Method

  1. Put the skyr in a bowl and stir it with a spoon or whisk until smooth and creamy.
  2. Stir in the honey until evenly mixed, adding more or less to taste.
  3. In a second bowl, toss the blueberries with the lemon juice.
  4. Gently fold the berries into the skyr so they stay mostly whole and leave only light streaks.
  5. Divide the skyr between two bowls.
  6. Garnish with a few mint leaves if you like, and serve straight away.

Tips and variations

Agave syrup or maple syrup work in place of honey. For a cold soup, bring blueberries to the boil with water, maple syrup, thyme, lemon juice and salt, let cool, blend with skyr and chill. For ice cream, mix skyr with cream and wild blueberry jam and freeze; for a smoothie, blend frozen blueberries with banana, skyr and almond milk. For breakfast, serve skyr with soaked oats, blueberries, kiwi and nuts. Serving tip: wild blueberries give a stronger flavour and a deeper colour.
