Fresh baker's yeast pressed into a moist block, used to leaven doughs such as bread, cinnamon buns or braided loaves.
In German-speaking countries, fresh yeast is sold in small blocks in the chilled section of almost every supermarket. In Britain and North America it is harder to find; try a bakery, the in-store bakery counter of a larger supermarket, or Polish and Eastern European shops.
Substitute:
Dried yeast is a good substitute at about one third of the weight, roughly 7 g dried yeast for 21 g fresh. The flavour and the result barely change.
