vanilla sugar

Sugar flavoured with vanilla, sold in German-speaking countries mostly in small sachets of about eight grams.

Vanilla sugar is sugar flavoured with real vanilla; in Germany, Austria and Switzerland it sits on every supermarket shelf, while in English-speaking countries it is more likely found in Eastern European or Scandinavian shops or by mail order. It is also easy to make at home by leaving a scraped vanilla pod in a jar of sugar for a few days.

Substitute:

One sachet can be replaced by about a tablespoon of sugar and a teaspoon of vanilla extract; in dry mixtures such as crumble toppings or for dusting, the extract adds a little moisture, so the seeds of half a vanilla pod rubbed into sugar work better there.
