syrup

Light or dark sugar syrup as used in Nordic baking, thick and sweet, the dark kind with a slightly bitter caramel note.

In Scandinavian recipes, syrup usually means a sugar syrup made from beet or cane sugar, sold in light and dark versions. It is rarely found outside the Nordic countries, most likely through mail order or in shops carrying Scandinavian or British products.

Substitute:

Golden syrup is a very good match for light syrup. For dark syrup, mix golden syrup with a little molasses, black treacle or sugar beet syrup, since any of these alone tastes stronger and more bitter. Honey or maple syrup noticeably change the flavour.
