aquavit
Scandinavian spirit distilled from grain or potatoes and flavoured with caraway, often with dill.
Aquavit is a clear or cask-aged golden spirit whose flavour comes mainly from caraway and often from dill, fennel or anise. In German-speaking countries it is usually on the spirits shelf of an ordinary supermarket, while in English-speaking countries it is more likely found in a well-stocked liquor shop or by mail order.
Substitute:
A caraway schnapps comes closest, or plain vodka in which caraway seeds and a little dill have been steeped for a few days. Both are spicy, but simpler and harsher than aquavit. Gin is not a good substitute, because the juniper overwhelms the caraway.
